I would like to know things like: do women in a mosque pray exactly like the men do? what if you're an arthritic old woman who can hardly bend her knees etc etc

the arthritic old woman will pray the exactly same way as an arthric old man would pray...by either sitting down or lying down.

JudyR women don't pray the same as men.
In fact, men don't pray the same as each other sometimes. It's actually a matter of fiqh (jurisprudence). The followers of the shafii school of thought pray similar to the way women in the hanafi school of thought pray. But there are some general principles in prayer (such as the standing, the bending, the sitting - qiyam, ruku sajdah etc) that apply to both women and men.
